Hey Jess. I am the first to comment on your vlog. Anyway, I think that your reasons for knitting are really cool. The thought that the idea of giving your finished to other people was a sweet idea. I know someone who might want a hat. I do not know who that is, but you better find them. You have a lot of sources to use. It seems that Youtube is a great source to find people who have experience with working with knitting etc. You seem to want to do good with your project, which is a great idea.
